Ingredients
For the Bars:
- 6 TBSP butter melted
- 2 TBSP vegetable oil
- 1 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup plus 2 tablespoons all-purpose flour
- 1 tsp ground cardamom
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp black pepper
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coarsely chopped pistachios
For the Topping: - 1 TBSP granulated sugar
- 1/2 tsp cardamom
- 1 TBSP finely chopped pistachios
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a stand mixer fitted with a paddle attachment, cream together the butter, oil, and brown sugar on medium speed for about 1 minute. Add the egg and vanilla extract, and continue mixing for another minute until well combined.
3. In a separate bowl, whisk together the flour and spices until evenly blended.
4. Reduce the stand mixer to low speed and gradually add the dry ingredients to the butter mixture. Mix until fully incorporated, being careful not to overmix. Fold in the chopped pistachios using a spatula.
5. Spread the batter evenly into the prepared baking pan. Use a spatula to smooth the top. Bake for 25 minutes in the preheated oven.
6. While the bars are baking, prepare the sugar topping by combining the sugar, cardamom, and finely chopped pistachios in a small bowl.
7. With 5 minutes remaining on the baking time, remove the pan from the oven and evenly sprinkle the sugar mixture over the top of the bars. Return the pan to the oven and bake for the final 5 minutes.
8. Remove the pan from the oven and allow the bars to cool completely in the pan before cutting them into squares.
Notes
Recipe can be doubled and baked in 9×13 pan.
