Ingredients

Dressing

  • 1/4 cup peanut butter
  • 1 TBSP rice vinegar 
  • 2 TBSP extra-virgin olive oil (EVOO)
  • 2 TBSP lime juice (31 grams)
  • 1 TBSP light soy sauce
  • 3 TBSP honey 
  • 2 garlic cloves 
  • 1-inch fresh ginger 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon crushed red pepper flakes
  • 2 TBSP water 

    Salad
  • 1 romaine heart chopped 
  • 1 cup red or green cabbage shredded
  • 1 cup shredded carrots 
  • 3 green onions sliced
  • 1/2 red bell pepper chopped
  • 1/2 cup cucumber chopped
  • 1 mango chopped (optional)
  • 1/2  cup chopped peanuts or cashews

Instructions

  1. To make the dressing, combine all the peanut dressing ingredients in a bowl or pyrex cup and whisk until smooth.  Adjust the seasonings to your preference, then set the dressing aside.
  2. Chop Vegetables. And add them to a separate salad bowl.
  3. Pour the prepared dressing over the bowl of veggies and toss thoroughly to coat. Taste  the salad and add more dressing if desired. Sprinkle the chopped nuts on top, then serve  immediately.
